What exactly is a ‘sitio’?

A sitio is the name given to a small coffee farm, typically producing fewer than 500 bags per year. Because sitios are smaller, there is usually a stronger focus on quality. Think of thinner drying patios, hand-picked cherries, and much more attention to detail throughout the production process.

These farms are often located at higher altitudes in mountainous regions. Thanks to the controlled environment on sitios, both production and quality can be carefully measured and monitored.

Brazilian coffees are usually known for their chocolatey and nutty flavour profile. Sitios, however, can offer a much wider range of flavours, including clearly defined fruity notes such as blood orange, peach, and even floral characteristics.

Because these farms are small, the coffees they produce offer an incredible level of traceability. We were lucky enough to visit Sitio Amoreira ourselves and meet the owner, Mauricio Scalco.

Mauricio showed us around his beautiful farm, where many banana trees are planted as natural windbreaks and all operations run on 100% solar energy. He told us:
