Lose the snooze! This recipe will have you jumping out of bed, excited for breakfast.
Ingredients (Serves 4)
- 1 BOCCA x Brandt & Levie chorizo
- 2 bagels
- 4 eggs
- 50g butter
- 1/2 avocado sliced
- 1 tomato sliced
- Salt
- Pepper
- Olive oil
Preparation
- Cut the bagels in half and toast them in a toaster or briefly fry them in a frying pan golden.
- Crack the eggs into a bowl and beat well.
- Slice the chorizo thinly and remove the casing if needed.
- Melt the butter in a frying pan over medium heat and add the beaten eggs.
- Gently stir with a spatula until the eggs are softly scrambled and fluffy.
- Top the toasted bagels halves with avocado slices, tomato and scrambled eggs.
- Add the slices of chorizo on top.
- Season with salt and pepper to taste and finish with a small drizzle of olive oil.
