Bagel with Chorizo & Scrambled Egg

Lose the snooze! This recipe will have you jumping out of bed, excited for breakfast.

 Ingredients (Serves 4)

  •  1 BOCCA x Brandt & Levie chorizo
  • 2 bagels
  • 4 eggs
  • 50g butter
  • 1/2 avocado sliced
  • 1 tomato sliced
  • Salt
  • Pepper
  • Olive oil 

Preparation 

  1. Cut the bagels in half and toast them in a toaster or briefly fry them in a frying pan golden.
  2. Crack the eggs into a bowl and beat well.
  3. Slice the chorizo thinly and remove the casing if needed. 
  4. Melt the butter in a frying pan over medium heat and add the beaten eggs.
  5. Gently stir with a spatula until the eggs are softly scrambled and fluffy. 
  6. Top the toasted bagels halves with avocado slices, tomato and scrambled eggs. 
  7. Add the slices of chorizo on top. 
  8. Season with salt and pepper to taste and finish with a small drizzle of olive oil.

Tip: This bagel is perfect with a filter coffee. Pair with our Gusto, Ethiopia or Kenya for a breakfast party.
