Reserva El Jaguar is a family farm in Jinotega, Nicaragua, that produces specialty coffee to support the conservation of nature in the coffee producing region. Liliana Chavarría (Jinotegan), Georges Duriaux (Swiss living in Nicaragua since 1978) and their son Jean-Yves Duriaux Chavarría, are conservationists, bird researchers and coffee lovers. They started Reserva El Jaguar Coffee Farm in the early 1990s through nature-friendly agriculture that could support the conservation of the surrounding forests.
Currently, Reserva El Jaguar contains 50 hectares of Rainforest Alliance-certified agroforestry coffee at an elevation of 1300 to 1400 masl, and 110 ha of cloud forest under conservation. Reserva El Jaguar produces 2 to 3 containers per year of washed Catuaí and a set of microlots of different varieties and processing (e.g. natural, anaerobic fermentation, lactic fermentation). The main varieties are Catuaí Rojo, Catuaí Amarillo, Java, Maracaturra, H3, H17, H16.
