Coffee doesn’t begin as a bean. It starts as a fruit, a coffee cherry, growing on a tree. Inside that fruit are the seeds that eventually become coffee.
Once the cherries are picked, the question becomes: how do you separate the seed from the fruit? That step is called processing. And it has a significant influence on how a coffee will taste.
What is coffee processing?
Processing refers to the method used to remove the fruit from the coffee seed after harvesting. It happens at origin, often within hours after picking. The goal is practical: to stabilise the coffee so it can be transported and roasted.
But in doing so, it also shapes flavour. Sugars, acids and compounds from the fruit interact with the bean during this stage. And those interactions leave a trace in the final cup.
The three main processing methods
There are many variations, but most coffees fall into three broad categories.
Washed (or wet) process
In the washed process, the fruit is removed before the coffee is dried. The beans are
fermented in water to break down remaining sugars, then washed and dried.
This often results in:
● clarity
● a more defined acidity
● a cleaner overall profile
Washed coffees tend to highlight the origin more directly.
Natural (or dry) process
In the natural process, the whole cherry is dried with the bean still inside. As it dries, the sugars from the fruit interact more intensely with the seed.
This often leads to:
● sweeter, fruitier flavours
● a fuller body
● more pronounced aromatics
Natural coffees can feel more expressive, sometimes even unexpected.
Some coffees take this approach a step further. With more controlled fermentation and drying, often referred to as advanced natural processing. The result can be more precise, while still keeping that fruit-forward character.

Honey (or pulped natural) process
In this method, part of the fruit is removed, but some of the sticky layer (mucilage) remains during drying.
The result often sits between washed and natural:
● balanced sweetness
● some fruit character
● with more structure than naturals
The exact outcome depends on how much mucilage is left and how the coffee is dried.
Processing is not better or worse
No method is inherently superior. Each approach brings out different aspects of a coffee.
● Washed → clarity and structure
● Natural → sweetness and intensity
● Honey → balance and texture
What matters is how well the process is executed and how it aligns with the coffee itself.
Processing and origin work together
Processing doesn’t define a coffee on its own. It interacts with origin, variety and climate. A natural coffee from Ethiopia will taste different from a natural coffee from Brazil. Even though the method is the same.
Processing shapes the direction. Origin gives it identity.

It influences sweetness, body, clarity and how flavours are perceived. But it’s only one layer.
