Brazilian coffee is a safe bet. Not much can go wrong with this easy-to-drink coffee. The coffee has very low acidity and has many nutty notes of its own. The Brazil coffee is selected by us on the basis of physical quality, the consistency of the size of the beans, the number of defects (or rather lack thereof), and the taste are important factors in this.
A light, fast roast can appear a bit peanut-like, but can also be very open and almost vanilla-like. This coffee can be roasted very darkly and still be tasty. Think more of dark chocolate, earthy notes, and buttered toast.
